PRODUCT DESCRIPTION

A juicy, saucy dish using pork belly confit instead of pork cheeks (Gymkhana's famous restaurant rendition). Serve the belly with Basmati Rice or Naan to mop up every bit of the spiced, tangy Vindaloo sauce. Vindaloo or vindalho is originally from Goa, and is based on the Portuguese dish carne de vinha d'alhos. Paired perfectly with our finest pork belly confit which has been slow cooked for 14 hours to guarantee maximum flavour and tenderness.

To complete this recipe at home, you will need the following additional ingredients:

  • 1 tsp Crushed Black Pepper
  • 4 tbsp Cooking Oil
  • 150ml Water
  • Coriander Sprigs and Ginger Juliennes to garnish
  • 2 Spring Onions, finely chopped
  • Salt to taste

COOKING INSTRUCTIONS

Preheat your oven to 180C. Rub the pork confit with crushed black pepper then set aside for a minimum of 30 minutes.Place the pork confit in a casserole dish, pour over the Vindaloo Cooking Sauce and the water. Cover with a lid or foil at 180C or oven safe lid and cook in the oven for 30mins, then remove the lid or foil, baste the confit with the sauce and cook for a further 10 minutes. Garnish with coriander, ginger juliennes and spring onions.Serve with naan or Basmati rice
