PRODUCT DESCRIPTION

A true classic, this exceptional dish is chef-prepared by slow-cooking a half free range duck for 14 hours in an orange jus, using the finest ingredients and flavours. If you are a duck lover, this succulent masterpiece is likely to become one of your DukesHill favourites.

COOKING INSTRUCTIONS

1) Pre-heat oven to 190°C / 375°F / Gas Mark 5. 2) Carefully cut open bag, separate the duck and orange slices from the juices. Remove all hardened duck fat. 3) Empty remaining orange sauce into small pan. 4) Carefully place the duck skin side upwards (with or without orange slices) onto a pre-heated non stick tray or lined with parchment paper. 5) Place the meat into a hot oven and cook for 30-35 minutes. If the skin is not sufficiently crispy over the entire duck, turn the oven up to 200°C / 400°F/Gas Mark 6 for final 10 minutes of cooking. Alternatively, if starting to brown too quickly, cover with baking foil to avoid burning. 6) Bring the sauce to simmer during final 5 minutes of oven cook, reduce to thicken and season to taste. Baste over the duck during reheat if required or serve seperately with roast duck. 7) Remove duck from oven, keep warm for 5-6 minutes to avoid burning.

Keep refrigerated <5°C. Once opened consume within 3 days. Suitable for freezing. Once defrosted, consume within 24 hours. Do not refreze.
