Unbox the turkey and set aside.
- On a clean work surface, cut a large sheet of parchment paper.
- Lay 8 pieces of streaky bacon next to each over to create a sheet of streaky bacon.
- Fold back the tops of every other piece of streaky bacon, then getting some more streaky bacon, lay one strip across the bacon strips that haven’t been folded back.
- Then, unfold the bacon over the top of the strip you have just laid, repeating this process until you have a large square of weaved smoked streaky bacon.
- Rub the butter over the turkey breasts and down the sides.
- Lift the parchment paper with the bacon and the turn it over the bird, placing the bacon weave onto the turkey breasts. Press down the bacon weave, then preheat the oven to 160c fan.
- Cook the turkey depending on its size - it will need to reach 65c when probed with a thermometer. Then remove from the oven and allow to rest.
- If the bacon gets crispy, or comes away from the turkey, but the turkey still hasn’t reached temperature, you can carefully remove the bacon weave, continue to cook the turkey, and add it back onto the turkey once removed from the oven and cooked thoroughly.
