Heat a large frying pan over a medium heat. Add the rashers of bacon to the pan and cook on 3-4 minutes on each side until crispy and golden. Once cooked, remove the bacon from the pan and place it on kitchen paper to absorb any grease. You’ll use the frying pan in a moment.
- Crack the eggs into a shallow bowl and whisk together with the milk until combined and smooth. Season with salt.
- Heat a generous knob of butter in the frying pan over a medium heat. Dip each halved slice of sourdough into the egg mixture, ensuring it’s completely saturated. Once the butter is sizzling, add the slices of bread to the pan. Fry for a couple of minutes on each side, or until golden brown and crisp.
