I love these brandy marinated prunes stuffed with mango chutney and wrapped in bacon, aka Devils on Horseback; they are still one of my all time favourite party foods. I remember being made to hand these scrumptious canapés around for my Mother, and it was always on the most joyous occasions, parties or Christmas. I’m not really sure where the name derives from but a guess would be that this version is dark and the other notable Victorian canapé was the Angel on Horseback (oyster wrapped in bacon) which is lighter. I wait to be corrected!

Directions

  1. Step 1 Remove any stones from each prune keeping the prune as intact as possible.

  1. Step 2 Soak the prunes in the brandy for a minimum of one hour.

  1. Step 3 Fill each prune with a teaspoon of mango chutney.

  1. Step 4 Half each streaky rasher vertically to give 24 long, thin, half rashers.

  1. Step 5 Roll each prune in the bacon and secure with a cocktail stick.

  1. Step 6 Bake at 200°C/180°C fan for 15 minutes or until golden and crispy.

  1. Step 7 Serve warm.
