130g pudding rice, washed and boiled for 5 minutes in water
60g caster sugar
675g plums washed halved and stoned
45g demerara sugar
1.5 vanilla pod *OR* a hefty grating of nutmeg

This Baked Rice Pudding with Brown Sugared Plums is more than just a creative spin on a familiar classic. Quick to prep and easy to make, this delicious desert recipe has been formulated to produce 6 servings but requiring as few ingredients as it does, it can be dialed up or down according to your need.

Directions

  1. Step 1 Pre-heat your oven to 160C/Gas mark 3

  1. Step 2 Grease a shallow ovenproof dish with your butter. Tip in the boiled rice, sugar, Hollis Mead Organic Milk and vanilla pod and stir to combine.

  1. Step 3 Place the mixture in the oven until the rice pudding is golden on top, creamy and cooked (approximately 2 hours).

  1. Step 4 Remove the rice from the oven and increase the oven temp to 200C/Gas mark 6.

  1. Step 5 Lay the halved plums cut side up over the surface of the rice pudding and scatter over the demerara sugar.

  1. Step 6 Return to the oven for a further 10/15 minutes or until the plums are tender and bubbling hot.
